Lactobacillus is the normal flora of the oral cavity, which is Gram-positive facultative anaerobic or obligate anaerobic bacilli. Lactobacilli can be divided into two categories: one is homologous fermentation strains, which mainly produce lactic acid after fermentation with glucose. Representatives of this group are Lactobacillus casei and Lactobacillus acidophilus, which are closely related to caries. The other type is heterologous fermentation strains, which produce lactic acid and a larger amount of acetic acid, ethanol and CO2 after fermentation, which is represented by Lactobacillus fermentum. The most commonly isolated species in saliva samples is Lactobacillus acidophilus, and the most common species in dental plaque is Lactobacillus fermentum. It can ferment a variety of sugars, has strong acid production capacity, can reduce the pH of plaque to below 5.5, and has high acid tolerance. Lactobacillus fermentum is often found in saliva and caries.
