DL-malic acid is a mixture of D-malic acid and L-malic acid. Malic acid is also known as 2-hydroxysuccinic acid. Because there is an asymmetric carbon atom in the molecule, there are two stereoisomers. That is, the left-handed body (L-malic acid) and the right-handed body (D-malic acid). In nature, malic acid exists in three forms, namely D-malic acid, L-malic acid and DL-malic acid.
DL-malic acid is a colorless crystal or white crystalline powder, odorless or slightly peculiar smell, with a special pleasant sour taste. Exist in flue-cured tobacco leaves, burley tobacco leaves and smoke. Naturally found in immature apples, hawthorns, and grape juice.
Application
- DL-malic acid is used in the food industry as a sour agent, color retention agent, preservative, and emulsification stabilizer for egg yolks, etc. It is also used in pharmaceuticals. As a sour agent, it can be used instead of citric acid. It is often used as a sour agent, preservative for refreshing drinks, cold foods, processed foods, and color retention agent for fruit drinks.
- DL-malic acid can be used as one of the synthetic raw materials of descaling agent and fluorescent whitening agent in the chemical industry. Adding to shellac varnish or other varnishes can prevent the paint surface from skinning. Polyester resins and alkyd resins produced with this kind of acid are plastics with special uses.
- DL-malic acid can also be used in medicines, cosmetics, metal cleaners, industrial deodorants and buffers.
- DL-malic acid is used in the textile industry as a coagulant inhibitor and a raw material for fluorescent whitening agents.
