Product Description
Sorbitol is the main photosynthesis product of Rosaceae plants. It is white hygroscopic powder or crystalline powder, flakes or granules, odorless. Easily soluble in water, slightly soluble in ethanol and acetic acid. It has a refreshing sweetness, the sweetness is about half of that of sucrose, and its calorific value is similar to that of sucrose. It will not cause dental caries when used as a sweetener.
It can participate in anhydride, esterification, etherification, oxidation, reduction and isomerization reactions, and can form complexes with a variety of metals. Sorbitol can be produced by the reduction of glucose. It is widely distributed in pears, peaches and apples, and the content is about 1% to 2%. Its sweetness is equivalent to glucose, but it can give people a strong feeling. It is slowly absorbed and utilized in the body, and the blood sugar level does not increase. It is also a good humectant and surfactant.
Benefits
1. Sorbitol has sweet properties: D-sorbitol has a cool sweet taste, and its sweetness is about 50%-70% of sucrose. 1g of D-sorbitol produces 16.7kJ of calories in the human body. After eating, it will not be converted into glucose in the blood, nor will it be affected by insulin.
2. Sorbitol has good moisturizing properties, which can keep foods certain moisture, prevent drying, and prevent sugar, salt, etc. from crystallizing. It can maintain the balance of sweetness, sourness and bitterness, and enhance the flavor of food. It is a non-volatile polyol, so it has the function of maintaining the aroma of food.
3. Sorbitol can absorb moisture and retain water. Adding a little in the production of chewing gum and candy can keep food soft, improve tissue and reduce hardening and sanding. It is used for water retention in breads and pastries. It is used in sweets and foods to prevent taste change during the logistics process. It can also chelate metal ions. It can also be used in canned drinks and wine to prevent food turbidity caused by metal ions.
Application
1. Food additives.
2. Thickener.
3. Sweetener, used to make sugar-free chewing gum as usual.
4. Used as a moisturizer, excipient, surfactant for cosmetics and toothpaste, and as a substitute for glycerin.
