Fumaric acid, also known as corylic acid or lichenic acid, is a carboxylic acid derived from butene. Fumaric acid tastes like fruit and can be found in Fumaric, Boletus, Lichen and Iceland Nori. Fumaric acid is white granule or crystalline powder, odorless, specific sour taste, strong sour taste, about 1.5 times that of citric acid, so low-concentration fumaric acid solution can replace citric acid. However, because it is slightly soluble in water, it is generally not used alone. It can be used in combination with citric acid and tartaric acid to show the sour taste of fruit.
Food-grade fumaric acid has low hygroscopicity and requires the least amount of neutralization with sodium bicarbonate. When fumaric acid is used as an acidic substance in a solid beverage gas generating agent, the product bubbles are long-lasting and fine. Fumaric acid is colorless, tasteless, and has no toxic side effects. Fumaric acid is commonly used as one of the main ingredients of compound preservatives.

- Fumaric acid is an intermediate of fine chemicals such as pharmaceuticals and optical bleaching agents.
- Fumaric acid is also used to produce unsaturated polyester resin.
